Kitakata is a dense little town of Ramen. In this rural town, there's over 120 Ramen restaurant with various unique variations. Kitakata is one of the Top Three Ramen in Japan.
Kitakata Ramen is famous for its special mix of soup and its flat and curly noodle.
Kitakata located in a flat depression surrounded by beautiful mountains.
I searched online and this shop seems to be the most local one with good comments. It is famous for it's transparent Ramen soup.

A small little boutique restaurant with traditional interior design
The wall is filled with signatures of celebrities and singers. Everyone is enthusiastic to know how to make the transparent soup.
Menu is hanged right above your head,
Other than Ramen, they also serves curry rice, soba, etc.
The noodle is great in texture, no wonder the Kitakata style of curly noodle won the top three in Japan.
The soup is simply as clear as spring water!!

It is a little town worth a short walk wandering arou, especially do it by cycling.
Transportation
Walk 7mins from JR Kitakata station.
You can rent a bike right outside the station in summer.
